Lazy Cat Kitchen's Lebanese Pumpkin Hummus is a delicious take on the traditional hummus. Cooked butternut squash or pumpkin adds a distinct flavor and gorgeous orange color. It's flavorful, creamy, and ideal for spreading or dipping on your preferred snacks.
Ingredients:
- 1 cup of cooked pumpkin or butternut squash
- 1 can 15 oz of chickpeas, drained and rinsed
- 2 cloves of garlic, minced
- 3 tablespoons of tahini
- 3 tablespoons of lemon juice
- 2 tablespoons of olive oil
- 1/2 teaspoon of ground cumin
- 1/2 teaspoon of smoked paprika
- Salt and pepper to taste
- Chopped fresh parsley and olive oil for garnish
Instructions:
Put the cooked pumpkin, chickpeas, garlic that has been minced, tahini, lemon juice, olive oil, ground cumin, and smoked paprika in a food processor
Mix until it's creamy and smooth
If the mix is too thick, you can add some water to make it the right consistency
Add salt and pepper to taste to the pumpkin hummus
If you need to, change the seasonings
Put the hummus in a bowl to serve and drizzle it with olive oil
Add some chopped fresh parsley on top to make it look nice
Put it on pita bread, vegetable sticks, or your favorite crackers and serve
