Ingredients:
- 4 medium zucchinis, sliced
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 cup crumbled feta cheese
- 1/2 cup fresh huckleberries
- Fresh mint leaves for garnish
Instructions:
In a bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper to create the marinade
Place zucchini slices in a large resealable bag or shallow dish and pour the marinade over them
Seal the bag or cover the dish and refrigerate for at least 30 minutes
Preheat the grill to medium-high heat
Remove zucchini from the marinade and grill for 3-4 minutes per side or until they are tender and have grill marks
Transfer grilled zucchini to a serving platter and sprinkle crumbled feta cheese over the top while the zucchini is still warm
Scatter fresh huckleberries over the zucchini and feta
Garnish with fresh mint leaves
Serve immediately and enjoy!
