Ingredients:

  • 2 cans 5 ounces each of tuna, drained
  • 1/4 cup breadcrumbs
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 egg, beaten
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

In a mixing bowl, combine drained tuna, breadcrumbs, parsley, Parmesan cheese, mayonnaise, Dijon mustard, beaten egg, garlic powder, salt, and pepper

Mix until well combined and the mixture holds together

Form the mixture into patties, about 1/4 cup each, and place them on a plate or baking sheet lined with parchment paper

Heat olive oil in a skillet over medium heat

Cook the tuna patties for about 3-4 minutes on each side, or until golden brown and heated through

These slow cooker chicken Parmesan meatballs are a delicious twist on a classic Italian dish. They're juicy, flavorful, and perfect for serving with pasta or bread.

Ingredients:

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jar marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions:

Ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, oregano, basil, salt, and pepper should all be mixed together in a bowl

Mix everything together well

Make meatballs out of the mixture that are about an inch across

Put half of the marinara sauce in the slow cooker's bottom

Put the meatballs in the slow cooker and cover them with the rest of the marinara sauce

Put the lid on top and cook on low for 4 to 5 hours or high for 2 to 3 hours, until the meatballs are fully cooked

In the last 15 minutes of cooking, cover the meatballs with mozzarella cheese

Warm it up and serve it with bread or pasta

Melted Witch Brownies with Marshmallow

Ingredients:

  • 1 box of brownie mix
  • 1/2 cup of unsalted butter
  • 2 eggs
  • 1/4 cup of water
  • 1 cup of mini marshmallows
  • 1/2 cup of chocolate chips
  • 1/4 cup of green icing
  • 1/4 cup of black icing

Instructions:

Preheat your oven to 350F 175C and grease a square baking pan

In a mixing bowl, combine the brownie mix, melted unsalted butter, eggs, and water

Mix until well combined

Pour the brownie batter into the prepared baking pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs

Remove the brownies from the oven and sprinkle the mini marshmallows and chocolate chips evenly over the top of the brownies

Return the brownies to the oven for an additional 2-3 minutes, or until the marshmallows start to melt and turn golden brown

Remove the brownies from the oven and let them cool completely in the pan

Once cooled, drizzle the green icing over the brownies in a zigzag pattern to create a 'witch's brew' effect

Using the black icing, add some 'witch's hat' decorations on top of the melted marshmallows

Allow the icing to set before cutting the brownies into squares

Serve and enjoy your Melted Witch Brownies with Marshmallow!

Strawberry Jam in a Mason Jar

Ingredients:

  • 1 pound fresh strawberries, washed and hulled
  • 1 cup granulated sugar
  • 1 lemon, juiced
  • Mason jar with lid

Instructions:

Chop the strawberries into small pieces and place them in a bowl

In a separate bowl, mix the sugar and lemon juice until well combined

Pour the sugar mixture over the chopped strawberries and stir to coat them evenly

Let it sit for 30 minutes to macerate

After macerating, transfer the strawberry mixture to a saucepan and bring it to a boil over medium-high heat

Reduce the heat to low and simmer, stirring occasionally, for about 20-25 minutes or until the mixture thickens and reaches a jam-like consistency

Allow the jam to cool completely before storing it in the refrigerator

It will continue to thicken as it cools

Instructions:

Put the cooked pumpkin, chickpeas, garlic that has been minced, tahini, lemon juice, olive oil, ground cumin, and smoked paprika in a food processor

Mix until it's creamy and smooth

If the mix is too thick, you can add some water to make it the right consistency

Add salt and pepper to taste to the pumpkin hummus

If you need to, change the seasonings

Put the hummus in a bowl to serve and drizzle it with olive oil

Add some chopped fresh parsley on top to make it look nice

Easter Bunny Cookie Pops

Ingredients:

  • 1 package of sugar cookie mix
  • 1/4 cup of butter, softened
  • 1 egg
  • Lollipop sticks
  • White chocolate candy melts
  • Pink candy melts
  • Mini chocolate chips
  • Small pink heart sprinkles
  • Edible googly eyes

Instructions:

Preheat the oven according to the cookie mix instructions

In a bowl, mix the sugar cookie mix, softened butter, and egg until well combined

Scoop out tablespoon-sized portions of dough and roll into balls

Place the cookie dough balls on a baking sheet and insert a lollipop stick into each one

Bake the cookie pops as directed by the cookie mix instructions

Let them cool completely

Melt the white chocolate candy melts in a microwave-safe bowl in 30-second intervals, stirring until smooth

Dip each cookie pop into the melted white chocolate, coating it completely

Allow the excess to drip off

Place the coated cookie pops on a parchment-lined tray

Melt the pink candy melts and use a toothpick to draw bunny ears on parchment paper

Let them cool and harden

Dip the top of each cookie pop into the pink melted candy to create bunny ears on top of the pop

Place two mini chocolate chips on each cookie pop for the eyes and add a small pink heart sprinkle for the nose

Attach edible googly eyes above the nose using a dab of melted white chocolate

Allow the chocolate to set completely before serving or packaging

Malbec Beef Skewers

Ingredients:

  • 1 lb beef sirloin, cut into 1-inch cubes
  • 1 bottle Lakeview Cellars Malbec 2016

  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions:

Put Lakeview Cellars Malbec, olive oil, garlic that has been minced, smoked paprika, dried oregano, salt, and black pepper in a bowl

Make sure the beef cubes are covered evenly in the marinade before adding them

Put it in the fridge for at least two hours or overnight with the lid on

Warm up the grill over medium-high heat

Use the wet wooden skewers to thread the beef cubes that have been marinated

Grill the skewers for three to four minutes on each side, or until the beef is done the way you like it

Serve the hot beef skewers with your favorite sides
