These Chicken Cashew Lettuce Wraps are a delicious and light meal option packed with flavor. Ground chicken is cooked with garlic, onions, and bell peppers, then seasoned with soy sauce, hoisin sauce, and sesame oil. Cashews add a crunchy texture and nutty flavor, while crisp lettuce leaves serve as the perfect vessel for wrapping up the savory filling.
Ingredients:
- 1 lb ground chicken
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 red bell pepper, diced
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/4 teaspoon red pepper flakes
- 1/2 cup cashews, chopped
- 1 head iceberg lettuce, leaves separated
- Sliced green onions, for garnish
Instructions:
Warm up a big pan with olive oil over medium-low heat
Add the onion and garlic and cook until they get soft
Break up the ground chicken and add it to the pan
Cook until it turns brown
Soy sauce, hoisin sauce, rice vinegar, sesame oil, and red pepper flakes should all be added and mixed in
Keep cooking for two to three minutes more, until the peppers are soft
Take it off the heat and add the chopped cashews
Place the chicken mix on top of the lettuce leaves
Add some sliced green onions as a garnish
Serve right away and enjoy!
