Low Carb Gluten-Free Caramel Apple Coffee Cake



Enjoy this Low Carb Gluten-Free Caramel Apple Coffee Cake, which tastes great with both caramel and apple. This coffee cake is great for people on a low-carb or gluten-free diet because it is made with almond and coconut flour and erythritol to make it sweet. The cake is moist, tastes great, and is topped with a rich, sugar-free caramel sauce. You can eat it for breakfast or dessert.

Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup granulated erythritol
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and diced
  • 1/4 cup sugar-free caramel sauce

Instructions:

Warm the oven up to 175F 350C

Prepare an 8x8-inch baking dish by greasing it or lining it with parchment paper

Mix erythritol, baking powder, cinnamon, salt, almond flour, and coconut flour in a bowl

Crack the eggs into a different bowl and mix them with the almond milk, melted butter or coconut oil, and vanilla extract

Add the dry ingredients to the wet ones and mix them together until everything is well mixed

Add the apple dices and mix them in

Spread the batter out evenly in the baking dish that has been prepared

Spread the sugar-free caramel sauce on top of the batter

In a hot oven, bake for 25 to 30 minutes, or until golden brown and a toothpick stuck in the middle comes out clean

Take it out of the oven and let it cool down a bit before you serve it
